Recently more attention has been given to distracted driving and the role cell phones play in driver inattention. There have been numerous studies done about the subject, and several regulatory agencies have banned their use.

Employers are being found liable specifically for employee crashes involving cell phone use. A recent National Safety Council white paper lists numerous cases involving judgments up to $24.7 million.

With the employer being the target in cases like this, it is important to have a strict written policy regarding employees' use of cell phones while driving.

Epicurean Delight  - Scott & Vicki Jones 2012 Honorary Chairs

Epicurean Delight has been raising funds for local healthcare needs since 1980. The current beneficiary of Epicurean Delight is the Inland Northwest Blood Center. INBC is the sole provider of blood services to our region. INBC must collect blood from 200 volunteer donors each day in order to meet the demand of more than 35 area hospitals and medical facilities. Proceeds from this year's event, to be held November 9th, will be used to advance INBC's life saving mission and provide funding for technology and blood center education and training. Over 1000 guests will enjoy some of the best cuisine offered by 30 local restaurants, 20 wineries and 7 breweries.

My wife Vicki and I have been longtime supporters of this wonderful event. I have served on the event steering committee since 1992 and am the co-chair of the culinary food judging committee. Vicki and I were thrilled to be asked to serve as the honorary chairs of this year's event. You can learn more about the Epicurean Delight at www.epicureandelight.org.

Welcome to one of the newest additions to the Fidelity Associates staff, Commercial Lines Account Manager Shelly Harrington!

"I was raised in the Kittitas Valley of Central Washington prior to moving to the 'west side' where I met my husband and raised our 2 now adult children. My time was spent between the soccer and baseball fields and the riding arena, while traveling around the northwest taking my daughter to compete in rodeos on the weekends. We have recently moved to the Spokane area where in my spare time I enjoy the outdoors, traveling, riding my horses and spending time with my family and new friends."
Crusty Rustic Bread

Here's an awesome fall recipe for crusty bread baked in a cast iron pot!

Yields 1 loaf

3 cups all-purpose flour
1 3/4 tsp salt
1/2 tsp active dry yeast
1 1/2 cups warm water (about 110 degrees)

In a large mixing bowl, whisk together flour, salt and yeast. Pour in warm water and stir mixture with a wooden spoon until a shaggy ball forms. Cover bowl with plastic wrap and allow to rise for 12-18 hours (on the counter at room temperature).

Heat oven to 450 degrees. Once oven has reached 450 degrees, place a cast iron pot covered with lid into preheated oven, heat pot for 30 minutes. Meanwhile, turn dough out onto a heavily floured surface then shape dough into a ball. Cover dough with plastic wrap and allow to rest while pot is heating. Remove pot from oven and with floured hands, carefully drop dough into hot pot (you don't need to grease the pot), cover with lid, then immediately return pot to oven and bake 30 minutes at 450 degrees. After 30 minutes, remove lid from pot and bake uncovered for 15 minutes. Remove from oven and allow bread to cool on a cooling rack. Once completely cooled, bread stores well in an open paper bag (it helps the bread maintain its crisp crust. It's not recommended to store it in an airtight container or Ziploc bag.)

Variation: you can make a wheat version of this with 1 1/2 cups whole wheat flour, 1 1/2 cups bread flour, 1 tsp salt, 1/2 tsp yeast and 2 TBSP honey. Combine with 1 1/2 cups +1/3 cup warm water and rise and cook according to the same directions.
