Are you looking for a delicious, festive cookie recipe for Christmas?  I have the perfect recipe for you!  I've made them on several occasions and they always get rave reviews.  Try these Lemon Raspberry Thumbprint Cookies.  The lemon flavor is subtle and has just the right amount of sweetness.

Lemon Raspberry Thumbprint Cookies


1 1/2 cups unsalted butter, at room temperature
1 cup sugar
1 teaspoon lemon extract
grated lemon rind from 2 lemons
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
raspberry jam (any jam would be delicious)

1. Preheat the oven to 350 degrees F.  Cover a large cookie sheet with parchment paper; set aside.
2. Cream the butter and sugar until combined.  Mix in the lemon extract and lemon rind.
3. Add the flour and salt on low speed and mix until thoroughly blended.
4. Roll 1 rounded tablespoon of dough into a ball and place on the cookie sheet 2-inches apart.  Press your finger into the center of each cookie.
5. Drop one level teaspoon of jam into each cookie hole.
6. Bake for 21 minutes.  Remove the cookies to a wire rack to cool.  When completely cool, cover and store at room temperature.  This recipe makes approximately 37 cookies.

Make-Ahead Freezing Tip:

Shape the dough into balls, place on a cookie sheet, and cover with plastic wrap.  Freeze for 3 hours.  Place the frozen cookie dough in a large, labeled freezer bag.  Remove as much air as possible and seal.  Write the baking directions on the bag.  Freeze up to 2 months. 

Thawing Out the Dough on Baking Day:

Cover a large cookie sheet with parchment paper.  Place the frozen cookie dough on top about 2-inches apart.  Thaw the cookie dough for 45 minutes.  Preheat the oven to 350 degrees F and bake the cookies as directed.
