[Recipes from our last Taste of Saskatchewan]

Quick Sour Cherry Salsa
700g Everyday Farms Frozen Tart Cherries
1/2 large red pepper, diced
1/2 large red onion, diced
4-5 cloves of garlic, diced
2 tbsp balsamic vinegar
Salt to taste
Thaw and drain the cherries, overnight if possible. Mix all ingredients together and let sit for 30 minutes. Best served on a crostini or cracker with a soft cheese, such as Brie.
You can also freeze any un-used salsa for next time!
