We're quite sure there are many in our newsletter membership who have been personally affected by the recent acts of terrorism in Oslo and the youth camp in Utoya.  At this writing, our hearts and prayers go out for the families and friends of those victims in this otherwise peace-loving country.

The story behind the Uffda Chips

The year was around 1982, and it was a busy morning in the Merlin Hoiness lefse shop in Harmony, Minnesota. Merlin was turning out potato doughnuts from the deep fat fryer, and the other workers were busy putting up the day’s supply of potato lefse. Like Reese's marriage of peanut butter and chocolate, the time appeared right for hot oil and lefse.

It must have been a playful moment that persuaded Merlin to drop some small pieces of lefse into the fryer, but when he removed the golden brown chips and tasted them for the first time, there was only one thing left to say…”Uff da!” Thus was born the “Uff Da Chips!”

New creations and inventions in a rural community like Harmony rarely go unnoticed, and Jason Davis of KSTP’s “On the Road Again”spent half a morning filming Merlin and how the chips were made. The news of this new Norwegian snack food hit the media on a Thursday, and by the following Tuesday a representative of Daytons department store was on the phone with Merlin requesting 500 bags of his now famous “Uff Da Chips” on condition they be delivered by the following Thursday morning. Could he make that happen? Of course!

It was a scramble—making the extra lefse and deep frying the chips. But that’s not all. Merlin was faced with finding 500 bags for the chips, working with the newspaper office for package labels, and of course he would need boxes from Badger to ship them all. It was a hectic time for the business, but Merlin proudly states the chips were delivered by 9 am on Thursday morning. Uff Da!

Through the years the Uff Da Chip has evolved into a tasty snack, sprinkled with a seasoned salt that contains garlic, onion, paprika and other spices. Merlin is now 93 years of age and still enjoys these chips, especially with French onion dip. We think you’ll want to try some too.

Note: Merlin Hoiness, founder of Norsland Lefse, is proud to be "100% Norwegian." (I contend that he is more than a little American, however. He recently told me he had received an email with a video of someone speaking Norwegian, and he was searching for an interpreter…)

Lefse is not just for the Holidays anymore... 

After transplanting to South Carolina, our son, Nate, moved to Austin, TX. When he was home last Christmas, we made lefse with some friends at church. Nate created the "Nor-Tex-Mex" breakfast taco. Using lefse in place of the tortillas, we filled them with scrambled eggs, bacon and cheese and topped them off with salsa and tabasco sauce. A new tradition was born!

Ole was tired after driving his truck from Minneapolis to Duluth, so he stopped at a diner in Cloquet for a snack. There were five mean-looking motorcyclists from Hibbing there and they started pushing him around and poking fun at him.

When the waitress brought Ole's food, the guys grabbed it from her and ate it. Ole didn't say a word...'just pulled a dollar from his pocket, paid his bill and walked out.

One of the cyclists said to the waitress, "That Norwegian isn't much of a man, is he."

The waitress replied, "No, and he's not much of a truck driver either.  He just ran over five motorbikes that were parked outside."
